Each year the 25th of April marks ANZAC Day, commemorating the day that the Australian and New Zealand Army Corps landed in Gallipoli in 1915. The day is steeped in tradition including dawn services across the nation and commemorative parades. Another tradition synonymous with this day is of a much sweeter variety, the humble ANZAC biscuit.
A simple combination of pantry staple ingredients, including rolled oats, flour, sugar, butter and syrup, these biscuits were prepared with love by women during the war to send off with their soldiers overseas. Due to the biscuits’ humble, nutritious ingredients and long-lasting freshness, they were the perfect care package for soldiers. As time went on, ANZAC biscuits became a symbol of resistance, resilience and resourcefulness. And such, the tradition of the ANZAC biscuits was born.
Striking the balance between chewy and crunchy is a matter of personal taste, so consider your audience carefully and don’t overcomplicate it; these biscuits are best made with love. In a bowl, combine oats, flour, desiccated coconut, sugar and a pinch of salt before adding a mix of melted butter and golden syrup to the dry ingredients. Once mixed, form individual balls on a baking tray to the desired portion size. Your cooking time is important; bake for slightly less than recommended for your portion size if looking for a chewier texture and cook for slightly longer if wanting that signature crunch.
