A classic chocolate cake that’s vegan? Yes, please! The trick to baking cakes without eggs is to rely on baking soda. When combined with something acidic like vinegar, the mixture bubbles up and creates a light and airy texture. Seriously, just sift together flour, sugar, cocoa, salt, and baking powder in one bowl, combine water, vegetable oil, vanilla and vinegar in another, and then mix together until smooth. Pour in a cake tin and bake until set. Dust it with icing sugar and fresh raspberries and you have one show-stopping dessert that everyone will love!
