Exquisine began in 1986 as a manufacturer of fine foods, including pâtés, cakes, juices and, of course, mousse. While Exquisine has experience in a wide variety of food manufacturing we now solely focus on working with our customers to create sensational desserts that make people smile – every time!

Our journey to becoming one of Australia’s premium suppliers of desserts is a tribute to the hard work of the many individuals who have been with us through the decades, as well as the vision and continuous efforts of our Managing Directors, David and Nigel Rose.

Early years

Berries-and-forkThe location of the original Exquisine factory was an unassuming single-fronted building in the back streets of Fitzroy, Victoria.

From this modest site we produced fine mousses, cakes and pâtés for many local cafes, delis and restaurants, filling their need for locally made, restaurant-quality food.

It was here that our famous, deliciously creamy chocolate mousse recipe was first created.

Our team quickly outgrew these humble premises and moved north to Lygon St, Brunswick. In this new commercial kitchen we were able to meet the growing demand for our gourmet foods and develop new lines including juices and terrines. Here, we began our process of consolidating, selling our cake business in 1993 to focus on our dairy desserts and deli produce.

Family business

After an initial partnership, David Rose took full control of Exquisine in 1988. With strong family values and ties Exquisine first employed David’s sister as Book Keeper in 1990 and, later, his brother Nigel as Sales Manager. Not to mention his young children who were prime taste-testers and label stickers from before they could even read.

The business grew from a small, local producer and supplier to supplying national quick-service retailers. Mousse sales went up and investment in new equipment was made to keep up with demand. In 2001 Nigel and David became equal partners in the business.

Current site

In 2004 we custom built our current factory premises in Thornbury, Victoria, 8km north of the Melbourne CBD and 19km down the Tullamarine Freeway from Melbourne International Airport. We acquired an adjacent site in 2009. This doubled our floor space and allowed us to update our facilities, including our state of the art CO2 refrigeration system. In 2015 we purchased another adjacent site to give us over 4,000 square metres of factory, storage and office space.

We now focus solely on our core competence of producing sensational quality dairy desserts.

We supply national quick-service restaurants, airlines, retailers and general food service and have also developed a range of desserts for export to Singapore, Malaysia, the Philippines and the United Arab Emirates.
